The olive oil culture is one of our region’s greatest treasures. The Apulian tradition of olive processing is centuries old, based around millions of amazing olive trees and an incredible number of historical olive oil mills. Puglia is the Italian region with the highest production of extra virgin oil, carrying on this old craft with a passion and a true fondness for the warmth of our sun and the strength of our soil.
From 4th to 30th November Borgo Egnazia will let you witness the making of olives into extra virgin oil via an unforgettable three day experience, during which some expert farmers of our area, the keepers of our rural heritage for generations, will walk you through the discovery of the olive.
Together, you’ll follow through the processing of this inherently Apulian fruit: from its hand picking from the fields of Masseria San Domenico to its cold-pressing at an authentic subterraneous mill, plus some not-to-be-missed tastings of “made in Puglia” extra virgin olive oils matched with some typical food products such as “frise”, cheese and home-made bread. You’ll also enjoy some moments of true creativity, with a lesson about the inlaying of olive leaves, a cooking class about some oil-based traditional recipes (notably, “focaccia” and “panzerotti”) and a short still-life drawing class allowing you to put on canvas Borgo Egnazia’s breath talking scenario of olive groves and the sea.
